Stuffed Pepper Soup Recipe

I came across a recipe for stuffed pepper soup the other day and decided to try it out for myself. Well, of course, I had to tweak it to my taste. Here is my version.

Stuffed Pepper Soup

3 c cooked rice (brown or white)
1 lbs lean ground meat (beef, turkey, deer, or ground meat of your choice)
1 T cooking oil/shortening
1 chopped green bell peppers
1 chopped red bell pepper
1 medium onion-diced
3 cloves of garlic-diced
2 cans of diced tomatoes
1 1/2 c tomato sauce
2 c chicken broth
1 can corn
1 can green beans
salt and pepper to taste

Brown the ground meat, drain. In a large frying pan, add the cooking oil/shortening and saute the bell peppers, onion and garlic until tender. Add the the cooked peppers, onions, and garlic to the meat in a large stockpot. Add the remaining ingredients (except the rice) and cook over medium/low heat for about 30 minutes. Serve the soup over rice. (I used sliced sweet peppers for garnish)
