This is a simple recipe and tastes absolutely yummy!
1 Head of Cauliflower (or a bag of frozen cauliflower)
1 Bunch of Broccoli (or a bag of frozen broccoli)
Several Potatoes, diced ( I use about 6 medium potatoes)
Diced Onion, Celery, and Garlic (I use 1 medium onion, 3 stalks of celery and a clove of garlic)
1 cup of dried potatoes (or a pouch of potatoes)
1/4 lb Velveeta
Salt and Pepper to taste.
Cut up all of the vegetables and add enough water to cover in a large stockpot. Bring to a boil and then reduce heat. Cook on medium until all of the vegetables are tender. Add the dried potatoes, cheese, salt and pepper. Cook until cheese is melted. Serve and enjoy.
