These are some of the best oatmeal cookies I have ever tried. I hope you enjoy them as much as I do.

3/4 c unsalted butter
1 c packed light brown sugar
1 large egg
1 t pure vanilla extract
3/4 c all-purpose flour
1/2 t baking soda
1/2 t salt
1/2 t ground cinnamon
3 c whole-grain rolled oats
1 c chocolate chips or raisins (optional)
1 c walnuts or pecans, toasted and chopped (optional)

DIRECTIONS:

Preheat oven to 350 degrees F, line two baking sheets with parchment paper or lightly grease the baking sheets.

In a large mixing bowl, add the butter and sugar. Beat with mixer until creamy and smooth (usually about 2 – 3 minutes). Add egg and vanilla extract. Beat until combined. In a separate bowl, mix together flour, baking soda, salt, and ground cinnamon. Add the flour mixture slowly to the creamed mixture until well mixed. Stir in the oatmeal, optional nuts, raisins, and/or chocolate chips.

Using a spoon or scoop, place cookies about 2 inches apart on the baking sheet. Wet your hand and flatten the cookies slightly until the cookies are about 1/2 inch thick. Bake the cookies for about 12 – 15 minutes or until light golden brown around the edges but still soft in the centers. Remove from oven and let cool for a few minutes on the baking sheet before removing them to cool completely.
