Cauliflower, Broccoli, and Potato Soup

This is a simple recipe and tastes absolutely yummy!

1 Head of Cauliflower (or a bag of frozen cauliflower)

1 Bunch of Broccoli (or a bag of frozen broccoli)

Several Potatoes, diced ( I use about 6 medium potatoes)

Diced Onion, Celery, and Garlic (I use 1 medium onion, 3 stalks of celery and a clove of garlic)

1 cup of dried potatoes (or a pouch of potatoes)

1/4 lb Velveeta

Salt and Pepper to taste.

Cut up all of the vegetables and add enough water to cover in a large stockpot. Bring to a boil and then reduce heat. Cook on medium until all of the vegetables are tender. Add the dried potatoes, cheese, salt and pepper. Cook until cheese is melted. Serve and enjoy.

This sounds yummy! And so easy! I buy the large bag of frozen veggies at Costco that is a broccoli, cauliflower, carrot, yellow squash mix–so colorful and would be great in this soup. Bookmarking. Thanks!

  2. Yum! And so easy! I’m afraid I’d add too much water, any measurement advice?

I just put barely enough water to cover the veggies.
